Williamsburg Orange Cake

YOU WILL NEED:

1 box Classic Yellow Cake Mix

2 eggs

1 stick (4 oz.) salted butter, melted

1 cup buttermilk

1 Tablespoon orange zest (about 1 orange)

1/2 cup walnuts, chopped1 cup, golden raisins, chopped

For Orange Frosting:

1 bag Classic Vanilla Frosting Mix

3 sticks (12 oz.) salted butter, softened

4 – 6 Tablespoons orange juice

1 Tablespoon orange zest (about 1 orange)


INSTRUCTIONS:

Preheat oven to 350° F. Butter, 2 – 8 inch cake pans.

Combine cake mix with eggs, butter, buttermilk and zest. Mix for 30 seconds. Scrape down sides andbottom of bowl. Add walnuts and raising. Mix for an additional 30 seconds. Pour batter into prepared
pans. Split evenly between pans and spread to level.

Bake for 25 minutes – rotating cakes half way through. Remove from oven and cool completely.
Prepare Frosting: combine softened butter and zest with frosting mix. Using an electric mixer, beat on low
speed until mix is combined. With the mixer on low speed begin adding the juice, 1 Tablespoon at a
time, and ensure the juice is completely mixed in before adding more.

Use about 1/3 of the frosting between the layers. Frost the outside and top of the cake. Enjoy!
